Bingka Bakar, Malay Royal Cake
If you travel to Batam, Riau Islands, don’t overlook the grilled bingka cake and bilis cake. These souvenirs have historical value, as they are often associated with the Malay Kingdom.
The shape of the grilled bingka cake is unique. Made from flour, eggs, coconut milk, sugar and salt, the cake is molded like a flower. After the dough is shaped, the cake is baked for about half an hour.
In the days of the Malay Kingdom, pandan-flavored bingka was known. Now, the flavor has been modified. Some add grated cheese or chocolate sprinkles.
The snacks are sold for Rp 20,000 per piece. The cake is also a bestseller. It is not uncommon for Malaysians or Singaporeans to come to Batam to taste bingka baker.
Bilis cake is also not to be ignored. Made from: wheat flour, eggs, onions, celery leaves, salt, flavoring, and dried anchovies or ikan bilis, it is a simple form. The dough is fried over low heat, and is ready to accompany the grilled bingka cake as a light snack in the afternoon.(SHA)
